Misir Wot - Ethiopian Red Lentil Stew

  1. Add 3 cups of water and bring to a boil.
  2. Add 1 cup of Guada Kulate and cook until rehydrated (5-10 minutes).
  3. Stir in 1 tsp of salt and 1 cup of oil.
  4. Add 2 cups of red lentils.
  5. Cook while continuously stirring and adding water as necessary to achieve your desired consistency, or until the lentils have cooked through.
  6. Season to taste (optional). Serve hot with Injera. Enjoy!

Doro Wot with Guada Kulate

  1. Add 2 liters of water and bring to a boil.
  2. Add 1 bag of Guada Kulate (250g) and let rehydrate while stirring occasionally.
  3. Add 1 cup of Berbere (optional). Cook for 5 minutes.
  4. Stir in 1 cup of oil of your choice. Cook for 5 minutes.
  5. Add 1 tsp Mekelesha (spice mix), 1 tsp Korerima (black cardamom), and 2 tsp of salt (or to taste).
  6. Add one whole chicken cut into 12 pieces, stirring occasionally. (For a vegan option, use Tempeh, plant-based chicken, or your choice of vegan protein.) Cook for about 10-20 minutes until the chicken or protein is cooked through.
  7. Add 3 TBSP of spiced Ethiopian butter (optional).
  8. Add 8-10 hard-boiled eggs (optional).
  9. Serve hot with Injera or your choice of flatbread.

Firfir

  1. Add 2 cups of water to a pot and bring to a boil.
  2. Add 1 cup of Guada Kulate and cook until rehydrated (5-10 minutes).
  3. Stir in 1/2 cup of oil and 1 tsp of salt.
  4. Add 1/2 cup of Berbere to make it extra spicy (optional).
  5. Add 1 peeled and chopped tomato.
  6. Pour in 1 cup of water and let it simmer.
  7. Tear Injera into bite-sized pieces and mix it into the stew.8. Add chopped green chili pepper as a topping.

Whole Kik Allyich'a Wot

  1. Bring 2 cups of water to a boil.
  2. Add ¾ cup of Guada Kulate, and cook until rehydrated.
  3. Add ½ cup of oil and cook for 5 minutes.
  4. Add 1½ TBSP of minced garlic, 1 TBSP of ginger, and 1 TBSP of ground turmeric and stir into the stew.
  5. Add 2 cups of whole Mung beans or any other beans (lentils) and stir consistently, adding water as needed until the lentils are cooked.
  6. Add salt and pepper to taste and enjoy with fresh injera or flatbread of your choice.

Pumpkin Allyich'a Wot

  1. Bring 2 cups of water to a boil.
  2. Add 1 cup of Guada Kulate, and cook until rehydrated.
  3. Add ½ cup of oil and cook for 5 minutes.
  4. Add 1½ TBSP of minced garlic, 1 TBSP of ginger, and 1 TBSP of ground turmeric and stir into the stew.
  5. Add 500 grams of peeled, cubed fresh pumpkin (about 2 cups) into the stew and cook until the pumpkin is tender, adding more water as needed.
  6. Add 2 TBSP of chopped green pepper (deseeded if desired).

Allyich'a Shiro Wot

  1. Bring 1 cup of water to a boil.
  2. Add ¼ cup of Guada Kulate, and cook until rehydrated.
  3. Add ¾ cup of oil and cook for 5 minutes.
  4. Add 2 TBSP of minced garlic, 1 TBSP of ginger, and ½ TBSP of ground turmeric and stir into the onion mixture. Cook for 2 minutes.
  5. Add 300 grams of chickpea flour into the mixture and mix well until you have a smooth paste.
  6. Add 12 cups of water, one cup at a time, while stirring until the sauce thickens and starts to boil. Add water as needed to reach the desired consistency. Cook for around 20-30 minutes.
  7. Add salt and pepper to taste.
  8. Take off the heat and add 1 whole jalapeno pepper cut in half (deseeded if desired). Stir and serve hot with injera or flatbread of your choice.
  9. Enjoy your delicious Ethiopian dishes!
